Recipe- Stir Fried Brown Rice with Veggies



1 cup Lundburg Brown and Red Rice Pilaf Mix (or you can get the mixed brown rice packages from Trader Joes, already cooked in the frozen section of the store. Easy to use and delicious.)

1 cup Chopped Mushrooms

1 cup Chopped Bok Choy 

1 cup Chopped Zucchini

3 Cloves Garlic

1/4 tsp Chopped Ginger

Sea Salt to taste


Saute all veggies in 1 to 2 TBSP oil with ginger until al dente. Add the garlic and saute another 2 or 3 minutes. Add the cooked brown rice mixture and saute another 2 to 3 minutes until cooked through. Season to taste. If you like soy sauce you can sprinkle a little on and seaweed flakes or kelp flakes. Cilantro for garnish is also tasty. Enjoy!
