Recipe- Chilled Armenian Cucumber Soup

 

Ingredients:

1 Large Armenian Cucumber (or Japanese is great too)

1/4 cup Chopped Red Onion (or less depending on your tastes)

2 Stalks Green Onion

1 Yellow Bell Pepper

8 oz Greek yogurt

2 TBSP Sour Cream

2 TBSP Fresh Lime Juice

1 to 2 tsp Rice Wine Vinegar

2 TBSP Fresh Dill or Cilantro (the soup can go in either direction and tastes great either way. Just use one though of these)

Pinch of natural sugar or brown sugar

Sea Salt & Fresh Ground Pepper to taste

 

Pulse in a blender half the cucumber, the red onion and yogurt. Do NOT over-blend. You want it relatively smooth but not pureed.

Dice small the rest of the veggies and add to the blended mixture. Add lime, sour cream and seasonings to taste.

Adjust seasonings, lime and sour cream to your tastes. If you would like the soup thinner, just add a bit more sour cream. Mix well but do not blend at this point.

Finely chop the green onion, cilantro or dill for garnish.
