Summer Dinner Menus

Please make these your own. I am so often asked for meal planning or menus that I will be adding some ideas for you as I can. Remember, these are just ideas based on the season. I try to do dairy and wheat free menus but occassionally you will see either. Not everyone has an intollerance to those foods. These are things I like to eat and cook, if it sounds complex, take the bare bones of the idea of the menu and make your own salad dressing for example, sauce, rub or pesto- whatever. Cooking is a divine experiment. Have fun! Get your hands messy and ENJOY!

Assorted Heirloom Tomato Salad with White Balsamic Vinegar and a Local Olive Oil, Sea Salt and Fresh Ground Pepper
Fresh Herb & Peppercorn Crusted Rib Eye Steaks with Wild Rice Pilaf and Summer Squash

Baby Lettuce Salad with Lemon Garlic Vinaigrette
Roasted Lemon Chicken with Roasted Root Veggies and Minty Slaw

Micro Greens Salad with Light Lemon Herb Vinaigrette
Wild Salmon with Rub of Your Choosing (I use a smoked paprika, sage and brown sugar herb rub)
with Coconut Ginger Pesto (or pesto of your choosing) Brown Rice Cakes with Ginger and Green Onion and Wilted Spinach with Brown Butter
