Recipe- Crunchy Vietnamese Salad with Ginger Dressing & Toasted Peanuts

 

Salad Ingredients:

1/4 head of napa cabbage, shredded thin

1/4 head or less of red cabbage, shredded thin

1/2 head roamine lettuce, shredded thin

1 cup fresh cleaned snow peas, chopped into 1 ” pieces

1 ripe red anaheim or hot chili pepper seeded and sliced very fine

2 green onion chopped fine

Toasted peanuts, chopped up into pieces for top of salad

Fresh cilantro to taste

Dessing Ingredients:

1/2 cup Rice wine vinegar

1 cup light olive oil or other light oil  (without a strong flavor) you enjoy

1 TBSP sesame chili oil

1 tsp ginger powder

1 to 2 tsp raw white sugar (to your tastes)

Pinch sea salt

1. Mix all salad ingredients together except peanuts and set asside in refridgerator.

2. Mix salad dressing ingredients together well and save until ready to serve salad. This is a relatively strong dressing so be sure to toss some of the salad with dressing and taste it before adding more.

3. Garnish last with peanuts so they stay crunchy.
